    French Onion Soup (meat/vegetarian) - Caramelized onions simmered in a hearty beef stock and served with a thick slice of toasted baguette topped with Gruyere

  • WEEK 2:
    Local Beef and Bean Chili (meat/vegetarian) - Lonesome Whistle Brightstone and Whipple beans. The meat version has grass fed beef from Kings Valley.

  • WEEK 3:
    Ginny Filbert’s Italian Sausage Soup - Spicy Italian sausage, tomatoes, GTF kale, chard, carrots and onions, in a rich beef broth (meat)
    Italian Vegetable and Farro Soup - nutty flavored farro, GTF braising greens, carrots, and onions, in a homemade vegetable stock (vegetarian)

    Creamy Cassoulet Vert: A white bean stew with local chicken, white beans, lemony kale pesto served with avocado and microgreens on the side (meat)
